STIR-FRIED BABY BOK CHOY
5-6 bunches baby bok choy
1 teaspoon vegetable oil
1 tablespoon soy sauce
Trim the baby bok choy:
Cut off the stems and separate the leaves.
Rinse in cool water and drain.
Stack the leaves in a rough pile
and slice crosswise into 1/2-inch or so pieces.
Heat a skillet or wok over high heat.
Add the vegetable oil and let heat.
Dump the baby bok choy into the pan
and stir around to wilt the pieces.
Add the soy sauce (if you think you
need a dash more.. go ahead and add it).
Stir around.
The bok choy will shrink in volume dramatically..
so don't be alarmed. The total cooking time should be about 1-2 minutes.
Serve with rice and other dishes.
